Low-Carb Turkey Shepherd’s Pie

A comforting, low-carb twist on a classic dish using ground turkey and creamy cauliflower mash with a pepper jack kick.

Instructions

  1. Steam or boil cauliflower until tender (10–12 min). Drain well: place in a clean kitchen towel and squeeze out excess moisture. Then mash or blend with butter, cheese, cream cheese, salt, and pepper.
  2. In a skillet, sauté onion, garlic, and optional celery in oil or butter for 5 minutes.
  3. Add ground turkey and cook until browned. Stir in tomato paste, broth, salt, and pepper. Simmer until thickened (5–7 min).
  4. Preheat oven to 375°F (190°C). Spread turkey mix in a baking dish, top with cauliflower mash, and extra pepper jack if desired.
  5. Bake for 20–25 minutes until bubbly and golden. Broil for 2–3 minutes for a crispy top. Let rest 5–10 min before serving.
